I was looking at all these threads
    Music…I listened to some
    Taco Tuesdays
    French Fry Fridays

I thought what about; Food…I ate some… or maybe Thai Tuesdays….

Anyway, if anyone wants to post good grubs you've made, let's see it and maybe a recipe or tips on making it.

I'll start if off with some Thai Spicy Chicken and Pineapple/Shrimp Fried Rice.

It's really good and easy to make. It's not hard to find the ingredients in Asian markets. Trader Joe's sells a good fish sauce called Red Boat. It's hard to find at Asian markets so TJs is easier and it tastes better than many other fish sauces.

I mixed lime and tangerine flavors for the chicken.

Thanks Jamie. I figure everyone eats but not everyone cooks so maybe we can get some things on here that will inspire more to cook.

I hope people will post how they made things so we all get some tips. It could be internet/cookbook recipes or your own ideas. I tend to make a recipe, then note what I didn't like or would like more of then make changes.

    Since it's Taco Tuesday…

This is a corn tortilla warmed over the flame (brings out the flavor)
One Anaheim chile, blackened over the flame, with skin and seeds removed.
Split it open and add pepper jack or your favorite cheese.
Put under the broiler to melt cheese and add a slight crust.
I added sliced avocado and sliced tomatoes. You could add pico de gallo or any hot sauce, onions, cilantro or ?

    Easy and cheap.

    * When getting corn tortillas, look for ones that only contain, corn, water, salt and lime. It it has a long list of ingredients, all those preservatives smell when you warm up the tortilla. My favorite corn tortillas are Diana's King Size Corn Tortillas (yellow label with red lettering), or the freshly made in-store, yellow corn tortillas at Northgate Markets and Trader Joes brand but they are smaller. All three of those just taste like corn. Great for fried tacos.

    @Racer X - Do you cater? :thumbsup:

Seriously, these are some awesome looking dishes. I think the first one I want to try is the pineapple rice. One of my favorites when we have Thai food...

That's why I don't understand carrying clif bars or other Non-tasty "fuel," on rides. Those burned and earned calories are for Beer and Nosh!!! At least pack a sandwich!

Cater? If you knew how slow I am at cooking…haha.
    Thanks! :)

I made pho last month. I know what you mean about getting all the ingredients. I felt like every store I went to had 3/5 items I wanted. I'm lucky to have so many Asian markets around me.

Agreed…at good ride is like earning grub credits.

Not all the ingredients are in the photos
    Fresh Tomatoes
    Canned, Fire-roasted tomatoes
    Cilantro
    Onion
    Fresh Garlic
    Salt
    Mexican Oregano or Regular Oregano
    Fresh Lime juice
Chiles (I use what I grow, Pequin, serrano, Chile de Arbol and Thai chiles)

I used a processor bowl that came with my blender. I make part of it pretty smooth and some more chunky then mix together.

I fried cut up tortillas for chips too….in lard. They went faster than I could take a photo.

    * When you cut the tomato, squeeze the seeds and goop out unless you want watery salsa.

Marinated short ribs. Wrapped inside the lettuce leaf and topped off with some scallions. Quick and easy. Took under 30 mins to prepare.

The beef was pre-marinated. I picked it up at a local Korean market. Thats why it only took 30 mins to prepare everything. The short rib was actually too thick to wrap into the lettuce leaves. Lol...the meat kept falling out. The better meat to use is the thin bulgogi. It wraps much better and cleaner.:D

If you plan on cooking this stuff...I suggest doing it outside. It makes a lot of smoke.:Roflmao

Not sweet potato. I think the camera just made them darker than they really were.

They look good because I didn't show the bad ones. I'll have to try sweet potato chips. Good idea.

This is what I used to slice the potatoes so thinly and uniformed:

Persimmon mini-bundt cakes for after dinner tonight. Fresh from the tree, ripened over the last couple of days and baked today.
