    I've never had any trouble cleaning our air fryer... I find it cleans quick and easy.. but we don't cook any meat so maybe thats why? (well chicken nuggets for the kiddos)

    We made ( non- seafood) Gumbo the other day. My wife prepped everything and I stood at the stove for an hour and a half to make the Roux. It’s chicken stew until you add Filet Powder table side. Served over white rice.

    Oh man, did some mahi on the grill and then brought it in for some jumbo burritos with home made beans and salsa. I guess the rice is home made too, but, that’s just putting it in a rice cooker.
    I did mine wet.

    Chile rellenos, first try, with guac from the backyard tree that is pumping out avos and a moderately spicy scratch salsa. (I had Cotija cheese and sour cream for the topping but was overwhelmed with hunger and so brain-farted) Most excellent dinner today!

    Just got home from riding Oaks with @scan . All o could think about the whole hour drive home was food.
    I started making some quesadillas but then decided to throw some beans on them and make some enfrijoladas!
    I haven’t had these in idk how long. My mom always used to make them for us and our friends after school. Sometimes I’d walk in from school and there’s already be one or two of my friends eating at our kitchen table talking to my mom.

    if you’ve ever wondered what everyday Mexican people eat, this is it. Just an easy old fashioned peasant meal.

    Drove over an hour north from the Castle Air Museum to the small town of Waterloo on highway 88 to have a late lunch at "German Guys" restaurant.
    I would drive the 2 1/2 hrs from the Ranch to eat there again, it was that good. One of the grandmothers is the cook.
    I had the meatballs (cubes actually) with a fried egg and grilled onions on top, mashed spuds with a crispy shell, and Bavarian sauerkraut.
    Then the dessert.........strudel and a bee sting.

    No beer cause I was driving.

    1 1/2# of New York style pastrami, american cheese (didn't have pepperjack), mayo, pickles, on a 12" bun. Steak fries, and a napkin.
    My son and I devoured it.

    This weekend is beer marinated tritip with steamed veggies.

    Fish Tuesday at the Boudreaux house because it's trash Wednesday. Macadamia Nut Crusted MahiMahi on a bed of citrus Beurre Blanc ( not a real beurre blanc because she didn't strain out the shallots- cuz she likes them ) topped with Mango Salsa, Bok Choy and mixed wild rice.
    **MahiMahi was purchased frozen from Von's at $8.99 for both pieces of fish on sale. Total cost per plate was app. less than $ 8.00. DLW ( Dear Loving Wife ) had the sauce components on hand ( white wine, etc. ) which would have increased cost.

    In Phoenix today for work, so went to JT Prime for dinner. The Manhattan was excellent, the filet was very good too. Figured if I'm in 102 deg temps the company is going to treat me!

    But my standing rib eye roast on Easter Sunday was the ticket, I must say.

    Wifey is away so the boys will play. Loosely translated that means Nick will play video games and shoot fake bad guys and dad will drink lots of beer and grill something while threatening to shoot Rusty for trying to snatch anything food related.

    Hard to go wrong with a Sam's Tri-Tip. Nick likes his cooked to the consistency of a baseball glove and Rusty is fine with completely raw so I tried to split the difference.

    I loved it. Rusty wasn't interested due to wolfing down a half a loaf of garlic bread while I wasn't looking and Nick peeked out of his room just long enough to inhale some then disappeared again. Oh and I didn't ride my bike cause I'm still trying to pay off Uncle Sams sorry ass....

    Boneless, skinless chicken thighs, seasoned with seasoned salt, garlic pepper and mojo criollo, in the convection portion of the oven; farro. Simple, tasty, and gone.
